Hardee Greens: Cultivating Community Wellness, One Microgreen at a Time

By the Cucina di Madre Terra Team

We at Cucina di Madre Terra are proud to feature Hardee Greens, a family-owned vertical farm in Jasper County, SC, founded by Jennifer Harsta. By blending cutting-edge sustainable techniques with Southern agricultural traditions, they produce pesticide- and herbicide-free microgreens and specialty greens that overflow with flavor and nutrition. Hardee Greens is more than a grower—they’re true community partners, educating the next generation, collaborating with local farms, and nurturing wellness one microgreen at a time.

“Our vision is simple: nourish our neighbors and nurture our land, one microgreen at a time.” — Jennifer Harsta, Founder

For Wellness Advocates & Health Enthusiasts

Hardee Greens’ microgreens pack 4–6× the vitamins and antioxidants of mature greens, making them an easy way to supercharge smoothies, salads, and bowls. Whether you’re a nutrition coach or a mindful eater, their nutrient-dense shoots deliver a natural boost of vitamin C, K, folate, and phytonutrients.

For Health-Conscious Consumers

By using 95% less water than field crops and zero synthetic chemicals, Hardee Greens’ vertical-farming methods deliver unbeatable freshness without compromising the planet. When you shop their produce, you’re supporting environmentally responsible farming and enjoying flavor at its peak.

We’re excited by Hardee Greens’ collaboration with South Carolina universities and biotech partners to explore microgreens’ potential in preventive health. From immune support to healthy aging, their research initiatives could unlock powerful new applications.
